With few exceptions, white wines are made from white grapes. Most of these quality wines are intended for early enjoyment and should be drunk young. The acidity is usually higher than in red wines, the alcohol content is usually lower. High-quality crescences can be stored for up to 30 years and longer without losing quality. Riesling in particular is one of the finest white grape varieties and is mainly cultivated in Germany, Austria and France (Alsace).

These wines are made from red grape varieties and, in contrast to white wines, are fermented on the mash or briefly heated. The main difference to white wines is the higher content of tannins (tannins), which are in the skins of the berries and are extracted through the special winemaking process. Large and complex red wines, which in Germany are often made from Pinot Noir, but increasingly also from Dornfelder, Cabernet Sauvignon or Merlot, should be allowed to mature.

Rose wines are made by processing the red grapes like white wine grapes. History of white wine

It is said that there is evidence that white wine was made in present-day Iran more than 7,500 years ago. It is also believed to have been made in Mesopotamia and various parts of the Middle East. Later, the Greeks and Romans also grew wine. They were responsible for spreading production throughout the Mediterranean. Mainly red wine was produced, but there is evidence that white wine was also produced. Then, after the fall of the Roman Empire, the Catholic Church was responsible for the care of the vineyards, as well as for the preservation and expansion of winemaking knowledge. Only in modern times and the industrial revolution did white wine become accessible to everyone. Advances in technology and understanding of microbiology made it possible to produce more and make white wine available to most people.

White wine - from must to fine wine

In contrast to the production of red wine, in the production of white wine, only the pressed grape must is fermented into white wine without the skin and seeds. This explains the white wine's light color and lighter, fresh taste. With this method, either red or white grapes can be processed into white wine, such as Blanc de Noir.

Harvesting, squeezing and pressing: The grapes are destemmed and crushed by machine immediately after harvesting. The free-running juice is collected and the grape mash is then pressed.
Special yeast is added to the must for fermentation. Winemakers control the fermentation process by regulating the temperature. After a few days of fermentation, the sugar contained in the grapes is converted into alcohol.
For further processing, the white wine is filled into steel tanks, wooden barrels or bottles, where it develops its individual aromas in different maturation times.

White wine by production or aging process:
  • Young wines: unaged white wines. These are mostly fresh and fruity with a good aromatic intensity. They are meant to be enjoyed immediately, but some will develop very well over time in the bottle.
  • Barrel-fermented or barrel-aged wines: After fermentation, the wine is barrel-aged. During this time, the wine gains toasted, caramelized, and smooth aromas.
  • Wines aged on lees: This can be done in all types of containers. Aging on lees means that the wine stays in contact with some yeasts from fermentation to give structure to the liquid.
  • Liqueur wines: These are wines that have undergone oxidative or biological aging and have been topped up with wine alcohol. Sherry wines are the best known in this group.

Very fresh, sparkling white wine is best enjoyed within a year. In principle, most white wines should not be stored for longer than 2-3 years. White wines in premium quality or with natural residual sugar can usually be stored longer.

Cultivation of red wine

Red wine has been cultivated and consumed by humans for at least eight thousand years. Because red wine grapes need a warm climate to grow, cultivation spread from the Middle East to southern Europe. With the Roman Empire, red wine grapes also reached France, Italy and Spain, where they found perfect growing conditions. Warm climate and many years of experience are the key factors for a good red wine.
Red wine production differs from white wine production in two important ways:

  • Red wines can only be made from red grape varieties.
  • In the case of red wines, the grape mash is fermented with the skin and seeds, while in the case of white wines, only the pressed must goes into the fermentation tank.

After the harvest, the red wine grapes are crushed and, depending on the desired type of wine, fermented on the skins for a few days to a month to release the color and tannins from the grape skins. After fermentation, the grape mash is pressed. The acids contained in the young wine are usually reduced with the help of malolactic fermentation in order to achieve a harmonious aroma. The wine then matures in wooden barrels or steel tanks, usually for up to two years, until it is bottled.

Red grapes produce an amazing variety of red wine varieties. From the strongest, heartiest red wines to elegant and dry red wines to sweet and simple picnic classics. In addition to the region of origin of the grape and the type of processing, the most important influence on the end product is the variety of the grape. In fact, there are only 32 main varieties of red wine grapes, from which winemakers can create a multitude of variations of red wine in their cellar.
